Number of Servings:

  1. 2 - to 4 pork loin chops centre-cut bone in (with a little marbling of fat)
  2. 1 tablespoons - grapeseed oil or olive oil
  3. 1 - small onion sliced
  4. 3 cloves - garlic roughly minced
  5. 2 - gala apples thinly sliced
  6. 2 cloves - cloves optional
  7. 1 teaspoons - cinnamon
  8. 1 tablespoons - honey
  9. 1/2 cups - chicken stock low sodium or water
  10. 2 tablespoons - light soy sauce
  11. 1 tablespoons - butter
  12. 1 1/2 tablespoons - cornstarch mixed with 2 tablespoons water optional, for thickening
  13. - salt and pepper to taste

Make a few small cuts around the sides of the pork chops so they will stay flat and brown evenly. Season the pork chops with a generous amount of salt and pepper.

Press Sauté button and click the adjust button to go to Sauté More function on the Instant Pot. Wait until the indicator says "hot".

Add grapeseed oil (or olive oil) into the pot. Make sure the oil coats the whole bottom of the pot. Add the seasoned pork chops, then let it brown for about 2 – 3 minutes on each side (just flip once). Remove and set aside.

Reduce heat to medium by pressing cancel button, then pressing sauté button. Add in the sliced onions and stir. Add a pinch of salt and pepper to further season if you like.
Cook the onions for roughly 1 minute until softened. Then add garlic and stir for 30 seconds until fragrant.

Add in the sliced apples, whole cloves (optional) and cinnamon, and stir. (Slicing the apples thinly will extract as much of their juice into the sauce as possible with a short cooking time.) Add the honey and partially deglaze the bottom of the pot by stirring and scraping bottom of pot with a wooden spoon.

Add chicken stock and soy sauce, then completely deglaze bottom of the pot with a wooden spoon. Taste the seasoning and add more salt and pepper if desired.

Place the pork chops back with all the meat juice into the pot. Close lid and pressure cook on Manual at high pressure for 1 minute. When time is up, turn off the Instant Pot and let it fully natural release (roughly 10 minutes). Open the lid carefully.

Remove the pork chops and set aside. Make sure to check the pork chops' internal temperature with a food thermometer. (Temperature should be at least 145°F.) Turn heat to medium by pressing the sauté button. Remove the cloves and taste the seasoning one more time. Add butter (and any other seasoning you desire) and stir until it has fully dissolved into the sauce.

Optional Step: Mix the cornstarch with water and mix it into the applesauce one third at a time until desired thickness, to thicken up the sauce.

Drizzle the applesauce over the pork chops and serve immediately with side dishes. Enjoy!
