Polish Christmas Ginger Cookies - Pierniczki

Ingredients:

  1. 1 cups - honey warm
  2. 1 cups - white sugar
  3. 1 cups - buttermilk
  4. 1 cups - vegetable oil - not olive oil
  5. 1 1/2 teaspoons - to 2 tsp. ground cloves
  6. 4 teaspoons - to 5 tsp. cinnamon
  7. 1 teaspoons - ginger
  8. 1 1/2 teaspoons - to 2 tsp. nutmeg
  9. 1 tablespoons - baking soda
  10. 2 tablespoons - water
  11. 5 cups - to 6 cups flour or more if needed

Directions:

Preheat oven to 350 degrees F.

Mix flour with spices in separate bowl.

Melt honey to liquefy to 1 cup, add to sugar in large bowl and stir, (heat from honey will melt sugar). Add buttermilk and oil and stir.

Dissolve baking soda in water and blend into liquid; it will foam a bit.

Add dry ingredients and blend well. Dough should be stiff, flour may be added if needed. Allow dough to sit about 10 minutes, add more flour if needed.

Roll dough into balls, heaping teaspoon size. (Grease hands with oil to prevent sticking.)

Place on ungreased cookie sheet and bake 10-12 minutes. Remove from sheet, cool and frost with chocolate icing. Best to have cool cookies and warm frosting so it coats nicely. I only frost the tops and allow excess to drip off.
