Ingredients:
- 2 quarts - water
- 1 cups - dry white beans
- 2 - potatoes peeled, diced
- 1/2 pounds - fresh green beans snapped
- 1/4 cups - dried basil
- 2 - onions sliced
- 1/4 cups - olive oil
- 3 - tomatoes (OR a 16 oz. can of tomatoes) peeled
- 1 cans - 8 oz. tomato sauce only if using fresh tomatoes; omit if using canned tomatoes
- 2 - zucchini sliced
- 2 tablespoons - salt or less to taste
- 1 tablespoons - pepper
- 1/4 cups - parsley chopped
Directions:
1. In a large kettle, bring water to a boil. Add white beans; boil 2 minutes. Reduce heat and simmer, covered, for 1 and 1/2 hours.
2. Add potatoes, snapped green beans, basil and some garlic; simmer 15 minutes.
3. Sauté onions in olive oil until golden; add to soup along with tomatoes, tomato sauce (if using fresh tomatoes), zucchini, salt and pepper. Simmer, covered, for 15 minutes.
4. Just before serving, sprinkle top with parsley.
