Ingredients:
- 1 cups - cassava flour
- 1 teaspoons - baking soda
- 2 tablespoons - grass fed gelatin (kind that congeals)
- 1/2 cups - maple syrup
- 1/2 cups - warm melted ghee. coconut oil OR palm shortening
- 1 teaspoons - 100% vanilla
- - pinch of sea salt
- 1/2 cups - palm shortening
- 1/4 cups - full fat coconut milk
- 1/4 cups - local honey
- - vegetable based food dye optional
Directions:
For Cookies:
Preheat oven to 350 degrees F. Combine all dry ingredients in a bowl and stir (including gelatin).
Combine wet ingredients in another bowl; stir to combine and then pour wet ingredients into bowl with dry ingredients. The dough will be too wet to work with, so let it sit for about 5 minutes first.
Take a small handful of dough and roll into a ball; press out into a circle about 1/4-inch thick onto a parchment lined baking sheet. If edges crack, just keep pressing by hand to seal easily.
Bake for 8 to 10 minutes until slightly browned. Remove from oven and allow to cool slightly. Use a thin spatula to transfer them to wire rack for continued cooling.
Ice and decorate, or eat just as they are.
For Frosting:
Blend together all frosting ingredients. Wait until cookies have cooled completely before frosting or frosting will melt.
