Ingredients:
- 3 tablespoons - butter or margarine
- 1 cups - chopped onion
- 1 cloves - minced garlic
- 1 pounds - ground beef (I most often use chicken ... or sometimes TVP)
- 1 1/2 teaspoons - salt
- dashes - each of pepper, cinnamon, ginger and turmeric
- 2 cups - cooked tomatoes
- 2 cups - frozen peas or green beans
- 2 - potatoes diced
- - cooked rice for serving with
Directions:
Saute in a skillet the butter, onion and garlic.
Add ground beef or chicken; brown well.
Stir in salt, pepper, cinnamon, ginger, turmeric, tomatoes, peas or beans and potatoes.
Cover and simmer 25 minutes.
Serve with rice. Garnish with coconut, if desired.
Note: To replace 1 pound of ground meat, use 1/3 pound of TVP and 1-1/3 cups of boiling water or broth. Place dry TVP in a bowl and pour boiling water or broth over the granules. Stir and let sit for 5 to 10 minutes. Use as directed in recipe.
