Oyster Chowder

Ingredients:

  1. 4 tablespoons - butter (1/2 stick)
  2. 1 - large onion diced
  3. 2 - potatoes peeled and sliced into chunks
  4. 2 - medium carrots sliced
  5. 1/4 cups - chopped celery
  6. 3 cups - half-and-half
  7. 1 cans - creamed corn
  8. 1/4 teaspoons - pepper
  9. 1 teaspoons - salt
  10. 1 pints - oysters with juice

  16. 3 cups - half-and-half
  17. 1 cans - creamed corn
  18. 1/4 teaspoons - pepper
  19. 1 teaspoons - salt
  20. 1 pints - oysters with juice

Directions:

Melt butter or margarine in a large pot. Add onions and celery and cook, stirring occasionally, until soft.

Add potatoes, carrots and parsley. Add half-and-half. Simmer until potatoes are soft.

Stir in 1/2 can of creamed corn; add oysters. Simmer 8 to 10 minutes.
