Orange Glaze Chicken

Ingredients:

  1. 2 cups - orange juice
  2. 1/4 cups - lemon juice
  3. 1/2 teaspoons - salt
  4. 1/2 cups - water
  5. 3/4 tablespoons - cornstarch
  6. 1/4 cups - brown sugar
  7. - skinless, boneless chicken breasts
  8. - olive oil
  9. - pineapple chunks and walnuts optional, for Hawaiian version
  10. - pepper and tomato slices optional, for Hawaiian version

Directions:

Saute chicken breasts in olive oil.

In a saucepan, mix orange juice, lemon juice, salt, water, cornstarch and brown sugar. Cook over medium heat, stirring constantly, until sauce thickens and becomes clear.

Place chicken in a roasting or other deep pan. Pour sauce over chicken.

Bake at 350 degrees for 1 hour or until sauce clings to chicken.

For Hawaiian Chicken: During last 15 minutes of baking, add pineapple chunks, pepper and tomato slices to roasting pan. Top with walnuts before serving.
