Ingredients:
- 1 cups - Finely Chopped Celery
- 1 cups - Finely Chopped Onion
- 1 cups - Finely Chopped Carrot
- 1/4 cups - Butter
- 1/2 cups - Dried Whole Peas
- 1/2 cups - Finely Chopped Zucchini
- 3/4 cups - Sliced Carrot
- 3/4 cups - Sliced Celery
- 3/4 cups - Coarsely Chopped Onion
- 3/4 cups - Chopped Bell Pepper
- 1/2 cups - Barley
- 1 cups - Shell Macaroni
- 2 tablespoons - Minced Parsley
- 1 teaspoons - Oregano
- 1 teaspoons - Basil
- 2 teaspoons - Soy Sauce
- - Pepper
- - Parmesan Cheese
- 1 cans - Diced Italian Tomatoes
- 3 cartons - Chicken or Vegetable Stock
- 1 cups - Finely Chopped Celery
- 1 cups - Finely Chopped Onion
- 1 cups - Finely Chopped Carrot
- 1/4 cups - Butter
- 1/2 cups - Dried Whole Peas
- 1/2 cups - Finely Chopped Zucchini
- 3/4 cups - Sliced Carrot
- 3/4 cups - Sliced Celery
- 3/4 cups - Coarsely Chopped Onion
- 3/4 cups - Chopped Bell Pepper
- 1/2 cups - Barley
- 1 cups - Shell Macaroni
- 2 tablespoons - Minced Parsley
- 1 teaspoons - Oregano
- 1 teaspoons - Basil
- 2 teaspoons - Soy Sauce
- - Pepper
- - Parmesan Cheese
- 1 cans - Diced Italian Tomatoes
- 3 cartons - Chicken or Vegetable Stock
Directions:
Slowly saute finely chopped onion, celery and carrot in butter until very brown. Add peas and about 12 cups of vegetable or chicken stock.
Cook slowly until vegetables are tender about 1 hour.
Add the remaining vegetables, barley and spices and more stock if necessary and cook another hour.
About 20 minutes before serving time add the macaroni and more water or stock if needed.
Ladle into bowls and sprinkle with Parmesan cheese.
Serve with crusty Italian bread.
