Ingredients:

  1. 1 cups - Finely Chopped Celery
  2. 1 cups - Finely Chopped Onion
  3. 1 cups - Finely Chopped Carrot
  4. 1/4 cups - Butter
  5. 1/2 cups - Dried Whole Peas
  6. 1/2 cups - Finely Chopped Zucchini
  7. 3/4 cups - Sliced Carrot
  8. 3/4 cups - Sliced Celery
  9. 3/4 cups - Coarsely Chopped Onion
  10. 3/4 cups - Chopped Bell Pepper
  11. 1/2 cups - Barley
  12. 1 cups - Shell Macaroni
  13. 2 tablespoons - Minced Parsley
  14. 1 teaspoons - Oregano
  15. 1 teaspoons - Basil
  16. 2 teaspoons - Soy Sauce
  17. - Pepper
  18. - Parmesan Cheese
  19. 1 cans - Diced Italian Tomatoes
  20. 3 cartons - Chicken or Vegetable Stock
  21. 1 cups - Finely Chopped Celery
  22. 1 cups - Finely Chopped Onion
  23. 1 cups - Finely Chopped Carrot
  24. 1/4 cups - Butter
  25. 1/2 cups - Dried Whole Peas
  26. 1/2 cups - Finely Chopped Zucchini
  27. 3/4 cups - Sliced Carrot
  28. 3/4 cups - Sliced Celery
  29. 3/4 cups - Coarsely Chopped Onion
  30. 3/4 cups - Chopped Bell Pepper
  31. 1/2 cups - Barley
  32. 1 cups - Shell Macaroni
  33. 2 tablespoons - Minced Parsley
  34. 1 teaspoons - Oregano
  35. 1 teaspoons - Basil
  36. 2 teaspoons - Soy Sauce
  37. - Pepper
  38. - Parmesan Cheese
  39. 1 cans - Diced Italian Tomatoes
  40. 3 cartons - Chicken or Vegetable Stock

Directions:

Slowly saute finely chopped onion, celery and carrot in butter until very brown. Add peas and about 12 cups of vegetable or chicken stock.

Cook slowly until vegetables are tender about 1 hour.

Add the remaining vegetables, barley and spices and more stock if necessary and cook another hour.

About 20 minutes before serving time add the macaroni and more water or stock if needed.

Ladle into bowls and sprinkle with Parmesan cheese.

Serve with crusty Italian bread.
