Old-Fashioned Rice Pudding

Ingredients:

  1. 3/4 cups - uncooked long grain rice
  2. 1 - large egg
  3. 1/2 cups - sugar
  4. 2 teaspoons - vanilla
  5. 1/2 teaspoons - salt
  6. - cinnamon
  7. 4 1/2 cups - milk
  8. 4 1/2 cups - milk
  9. 3/4 cups - uncooked long grain rice
  10. 1 - large egg
  11. 1/2 cups - sugar
  12. 2 teaspoons - vanilla
  13. 1/2 teaspoons - salt
  14. - cinnamon

Directions:

Warm milk; stir in rice. Bring to a simmer; cook uncovered, stirring frequently, until rice is tender (35 minutes).

In a medium bowl whisk together egg, sugar, vanilla and salt.

Gradually stir in some of the rice mixture until well blended; return to heat for 1 minute to cook egg.

Place in 6 custard cups and sprinkle with cinnamon. Refrigerate.
