Ingredients:
- 1 1/2 teaspoons - salt
- 1/2 - lemon
- 36 - large mushrooms stems removed, chopped and reserved
- 1/2 cups - prosciutto minced
- 1/3 cups - minced salami
- 3/4 cups - boiled ham minced
- 2 tablespoons - fresh parsley
- 1/8 teaspoons - thyme
- 1/8 teaspoons - oregano
- 1/4 teaspoons - dried sage
- 1/4 teaspoons - dried basil
- 1/4 teaspoons - freshly ground black pepper
- 1/2 cups - grated Fontina cheese
- 1 1/2 cups - Parmesan cheese
- 2/3 cups - chicken stock
Directions:
Add lemon juice from lemon to 3 quarts of salted, boiling water. Add mushrooms and cook 8 minutes. Drain on paper towels.
Combine remaining ingredients in bowl with 1 cup of the Parmesan cheese.
Pack mushroom caps with mixture and arrange in a baking pan. Add stock and bake at 350 degrees F for 10 minutes.
Pour off the stock; sprinkle tops with Parmesan cheese, and set under broiler until lightly browned.
