Mushroom Soup

Ingredients:

  1. 4 pounds - button mushrooms (cremini or white)
  2. 4 pounds - stock (vegetable, mushroom or chicken)
  3. 4 pounds - spanish onions chopped
  4. 4 ounces - garlic chopped
  5. 4 ounces - olive oil
  6. 1/8 bunches - thyme
  7. - salt and pepper to taste

Directions:

1- Sauté onions, garlic, & herbs in olive oil until translucent.

2- Add the mushrooms and sauté for 10 minutes.

3- Add stock and cook until mushrooms are tender.

4- Puree and season with salt and pepper accordingly.
