Mushroom Sauce

Ingredients:

  1. 1 1/2 pounds - butter
  2. 2 1/2 cups - flour
  3. 10 cups - chicken broth
  4. 6 cups - sliced mushrooms
  5. 4 teaspoons - lemon juice
  6. 1 1/2 cups - chopped fresh parsley

Directions:

1. Melt butter slowly; do not brown.

2. Then add flour, stirring until smooth. Cook for 1 minute.

3. Gradually add broth over a medium heat, stirring constantly until thick.

4. Remove from heat, and add the mushrooms, lemon juice, and parsley.

(One recipe makes approximately one gallon)
