    This would be great with 1/2 cup frozen peas added to the filling. In this case, you could substitute 1 cup frozen peas and carrots instead of the shredded carrot and peas. Instead of parmesan cheese, shredded cheddar cheese is good. Stir cheddar into the mashed potatoes, then sprinkle some more on top.

Ingredients:

  1. 4 - big russet potatoes
  2. 4 tablespoons - butter
  3. - milk, salt and pepper to desired consistency and taste
  4. 1/2 cups - shredded parmesan cheese
  5. 1 pounds - lean hamburger
  6. 1 - onion finely chopped
  7. 1/2 cups - shredded carrot
  8. 14 ounces - crushed tomatoes
  9. 1 tablespoons - tomato paste
  10. 2 teaspoons - worcestershire sauce
  11. 1 teaspoons - dried thyme
  12. 1/4 teaspoons - garlic powder
  13. - salt and pepper to taste

Directions:

1. Preheat oven to 375 degrees.

2. Peel potatoes, cut in half, then cut halves into quarters. Cook in boiling salted water until soft, checking for doneness at 12 minutes. Take off heat, drain and return to pan. Add butter, cover with lid and let sit until ready to mash.

3. While potatoes are cooking, saute hamburger, onion and carrot until meat is browned and vegetables are tender. Stir in tomatoes, Worcestershire, thyme, garlic powder, salt and pepper. Bring to a boil, then remove from heat.

4. Mash potatoes with milk, salt, and pepper to taste.

5. Coat a 9 X 9 baking pan with cooking spray, then put filling in pan. Spread mashed potatoes over the filling, gently spreading to cover completely. Sprinkle with cheese and bake until cheese is brown, about 30 minutes. Let stand 5 minutes then serve.
