This sauce freezes really well, so I usually make a double batch and freeze several containers. You can use less lean ground beef or sausage, just drain off the excess fat before adding the other ingredients. I use carrot in this recipe because I had very picky eaters and they wouldn't eat anything else. Luckily, it adds a good sweetness and texture to the sauce so it's a great compromise. You could replace the carrot (or add to it) with finely chopped peppers, mushrooms, or celery. If you like olives, you can add them to the sauce at the end.

Ingredients:
- 1 pounds - lean ground beef, turkey or chicken
- 1 - medium onion finely chopped
- 1 cups - carrot shredded
- 2 cloves - garlic minced or 1/2 tsp dry
- 28 ounces - canned crushed tomatoes
- 15 ounces - canned tomato puree
- 16 ounces - canned tomato sauce
- 1 tablespoons - dry leaf oregano
- 1 tablespoons - dry leaf basil
- 2 teaspoons - sugar
- 1/2 teaspoons - salt
- 1/4 teaspoons - black pepper
Directions:
Cook the meat, onion, carrot and garlic over med-high heat until the meat is browned and the vegetables are softened. Add all of the other ingredients, bring to a boil, then reduce heat and simmer for an hour, stirring occasionally. Taste and add salt and pepper if needed.
