Notes:
Use good quality sharp cheddar and grate it yourself--it tastes much better than the grated stuff in a bag. This would also be good with gruyere, or a mixture of any cheese you have.

Ingredients:
- 1 pounds - pasta I like small shells, elbow is classic
- 1/2 - yellow onion finely chopped
- 3 tablespoons - butter
- 3 tablespoons - flour
- 2 cups - whole milk
- 1 cups - heavy cream
- 3 1/2 cups - shredded sharp cheddar cheese
- 1/2 teaspoons - salt
- 1/4 teaspoons - pepper
- 1 tablespoons - dry mustard
- 1/4 teaspoons - paprika
- 1/4 teaspoons - dried sage
- 1 cups - cubed ham or chopped fried bacon more is better
Directions:
Cook the pasta according to directions on package. In large saucepan on medium heat, melt butter and saute onion till soft. Whisk in flour and cook for a minute till it starts to foam. Whisk in milk and cream, and cook until it thickens, stirring frequently. Whisk in 3 c. cheese until melted, then add all seasonings and ham/bacon. Remove sauce from heat and stir in almost all of the pasta. (I like m&c a little saucey, so I use all but a cup of the pasta. If you like it a little drier, use all the pasta.) Put mixture into a 9X9 baking pan or similar size casserole, sprayed with Pam. Sprinkle remaining 1/2 cup of cheese over the top and loosely cover with foil. Bake at 350 degrees for 30 minutes. Remove foil and bake 10 more minutes. Let stand 5 minutes before serving; be careful it'll be hot!
