Ingredients:
- 2 - potatoes
- 2 - large tomatoes diced
- 1 - Onion
- - fresh basil handful
- 1/2 c - fresh spinach
- 10 - carrots
- 1 cup - curry simmer sauce
- 2 cloves - garlic
- 1 TBSP - chili powder
- 1 TBSP - red chili flakes
- 2 - potatoes
- 2 - large tomatoes diced
- 1 - Onion
- - fresh basil handful
- 1/2 c - fresh spinach
- 10 - carrots
- 1 cup - curry simmer sauce
- 2 cloves - garlic
- 1 TBSP - chili powder
- 1 TBSP - red chili flakes
Directions:
1) Boil potatoes for 20 minutes, then peel and chop. set aside.
2) Add oil and garlic to pan on medium heat and stir until garlic is brown.
3) Add tomatoes and curry sauce. Simmer covered for 2 minutes.
4) Add salt, pepper, red chili flakes, and potatoes. Simmer covered on low heat for 5 minutes.
5) Add basil, spinach, and onions. Simmer covered for 5 minutes.
6) Remove from heat and let sit for 5 minutes. Serve with rice or pitas.
