This can be totally fat-free, or if you choose to start the garlic and onions in a bit of olive oil, it will add a little fat (polyunsaturated). Be careful to taste before adding salt, the bouillon cubes will be enough. If fat isn't a problem, lean bacon or ham make this soup good. Serve with garlic toast and sprinkle with FRESH GRATED PARMESAN CHEESE.

Ingredients:
- - fresh garlic
- - green onions
- - diced potatoes
- - sliced carrots
- - diced celery
- - shredded cabbage
- - green beans (flat Italian type are pretty)
- - sliced stewed tomatoes
- - red kidney beans
- - English peas (frozen work best)
- - fresh zucchini
- - stock
- - salt
- - pepper
- 1 teaspoons - basil dried
- 1 teaspoons - thyme dried
- - small shell pasta
Directions:
In a heavy stock pot start fresh vegetables in order. Stir until vegetables look wilted, then add stock. Use 1 bouillon cube (beef or chicken) per 1 cup of water. It will probably take 6-8 cups of water to make enough stock. Season with salt, pepper, basil, and thyme. When the fresh vegetables have cooked almost tender in the stock, add the canned/frozen vegetables. Do not drain canned vegetables. Add pasta about 20-30 minutes before serving.
