Mexican Wedding Cake

Ingredients:

  1. 2 cups - sugar
  2. 2 teaspoons - baking soda
  3. 2 - eggs
  4. 2 cups - flour
  5. 1 cans - 540 mL crushed pineapple with juice
  6. 1 cups - chopped walnuts
  7. 4 ounces - cream cheese
  8. 1 1/2 cups - butter
  9. 2 cups - icing powdered sugar
  10. 1 teaspoons - vanilla

Directions:

For Cake:
Mix together all cake ingredients. Bake in greased 9-x-13-inch pan at 350 degrees F for 40-45 minutes and cool.

For Topping / Icing:
Beat together frosting ingredients until fluffy and spread on cake.
