Ingredients:
- 1 packages - Quick-cooking rice
- 1 pounds - Lean Beef Steak (top round or boneless top sirloin) 1 inch thick
- - Nonstick cooking spray
- 1 - Red bell pepper Cut into thin strips
- 1 - Medium onion Chopped
- 2 - Jalapeno peppers Seeded and cut into strips
- 1 teaspoons - Ground cumin
- 1/2 teaspoons - Garlic powder
- 1 tablespoons - Fresh cilantro Chopped
- 1 teaspoons - Dried oregano leaves
Directions:
1. Wash your hands well with soap and hot water.
2. Cook rice according to package directions, but do not add salt. Set aside.
3. Trim fat from the beef steak. Cut the steak lengthwise in half and then crosswise into 1/8-inch thick strips.
4. In a small bowl, combine cumin, garlic powder, and oregano. Sprinkle this mixture over the beef.
5. Heat a large nonstick skillet or electric skillet to 400 degrees, and spray with vegetable cooking spray.
6. Add the bell pepper, onion, and jalapeno peppers to the skillet. Cook, stirring constantly, for 3 minutes or until tender-crisp. Add the beef and cook, stirring constantly, for 1 to 2 minutes, or until the meat is done.
7. Lower the heat to 325 degrees to simmer.
8. Serve 1 cup of beef mixture over 1/2 cup of rice for each serving. Garnish with cilantro.
