Brief Description
Soupe au Pistu is a fragrant vegetable soup - piquant tomato bouillon - originally from Genoa in northern Italy; also very popular in southern France. Vary the soup as you wish by adding diced fresh vegetables, canned beans or fine spaghettini, if desired.

Ingredients:
- 2 cloves - garlic
- 1/4 cups - fresh basil
- 2 tablespoons - fresh parsley
- 2 tablespoons - tomato paste
- 3 tablespoons - olive oil
- 1/4 cups - grated fresh Parmesan cheese
- 1 cans - 10 oz. tomato juice
- 1 cans - 10 oz. beef bouillion
- 2 - soup cans of water
- 1 cans - 7.5 oz. tomato sauce
- 2 teaspoons - sugar
- 1/2 teaspoons - salt
- 1/4 teaspoons - dried basil OR 1/4 cup fresh basil
- 1/8 teaspoons - thyme or fresh to your taste
- 1 leaves - to 2 bay leaves crumbled
- - freshly ground black pepper
Directions:
Combine all soup ingredients & simmer about 15-20 minutes.
Add some Pistou to the soup.
To make the pistou: In a blender add 2 garlic cloves, ¼ cup fresh basil, 2 tablespoons fresh parsley together with 2 tablespoons tomato paste and 3 tablespoons of olive oil. Then work in a ¼ cup grated fresh Parmesan cheese to produce the ‘Pistou’! Add as much of the pistou as you like to the soup and then pass extra for added flavour.
