Ingredients:
- 1 cups - chopped onion
- 1 cloves - garlic minced
- 1 - large green pepper chopped
- 1 - large bay leaf crushed
- 2 cans - or 3 cans kidney or pinto beans
- 1 teaspoons - curry
- 1 1/2 cups - chopped celery
- 3 - large tomatoes OR one 15 oz. can stewed tomatoes chopped
- - chili powder to taste
- - salt and pepper to taste
- 1 cans - 29 oz. tomato sauce
- 1 teaspoons - basil
- 1 tablespoons - paprika
- - cooked whole wheat noodles OR brown rice for serving with, if desired
Directions:
Saute onion, garlic and green pepper.
Add tomatoes, sauce, celery, beans and seasonings. Simmer 1/2 hour.
Serve over whole wheat noodles or brown rice.
