Ingredients:

  1. 1 tablespoons - olive oil
  2. 1 1/2 pounds - (675 g) stewing beef cut into 3/4-inch pieces
  3. 1 cups - chopped celery
  4. 1 cups - chopped carrots
  5. 1 cups - chopped onions
  6. 1 teaspoons - minced garlic
  7. 1 1/2 teaspoons - dried marjoram
  8. 3/4 teaspoons - dried thyme
  9. 7 cups - beef broth
  10. 1 cups - tomato sauce
  11. 2/3 cups - pearl barley
  12. 1/2 teaspoons - freshly ground black pepper
  13. - salt to taste
  14. 1/3 cups - chopped fresh parsley

Directions:

Heat olive oil in a large soup pot over medium-high heat. Add beef and brown on all sides. Work in two batches if necessary.

Reduce heat to medium. Add celery, carrots onions and garlic to beef in pot. Cook and stir for 5 minutes more. Add marjoram and thyme and cook for 1 more minute.

Add all remaining ingredients, except parsley. Bring soup to a boil. Reduce heat to medium-low. Cover and simmer for 1-1/2 hours, until beef is very tender.

Stir in parsley and serve hot.
