Loni's Pumpkin Oat Bran Muffins

Ingredients:

  1. 1 1/2 cups - unprocessed oat bran
  2. 1/2 cups - firmly packed brown sugar
  3. 1/2 cups - whole wheat flour (white has less fat but also less fiber)
  4. 2 teaspoons - baking powder
  5. 1 1/4 teaspoons - pumpkin pie spice
  6. 1/4 teaspoons - salt
  7. 1 cups - cooked, mashed pumpkin
  8. 1/2 cups - skim milk
  9. 2 - egg whites slightly beaten
  10. 3 tablespoons - applesauce

Directions:

Combine first six ingredients in a large bowl; stir well. Make a well in the center of the mixture.

Combine pumpkin, milk, egg whites and applesauce. Add to dry ingredients, stirring just until moistened.

Spoon into muffin tins coated with cooking spray, filling about 3/4 full.

Bake at 425 degrees F for 20 minutes or less (check on them after 15 minutes).
Approximately 125 calories and 1.5 grams fat per muffin.
