Ingredients:
- - Cooked lobster meat
- - Olive oil
- 3 cloves - Garlic peeled, thinly sliced
- - Pico de gallo (store bought) or any relish you like
- - Flour tortillas
- - Brie cheese
Directions:
1. Coarsely chop lobster meat. Set aside.
2. Heat pan with olive oil and garlic. Toast until lightly brown then set aside.
3. Set out as many tortillas as desired, then slice brie in fairly thin strips.
4. Place brie slices (3-4) on one side of tortilla and add a little of the toasted garlic then top with some of the lobster meat. Top again with brie and another tortilla. This can be done in multiple layers with extra tortillas.
5. Quesadillas can be grilled or cooked in a pan with a bit of canola spray. Cook quesadillas until heated through and cheese is melted to desired gooey-ness.
6. Serve with Pico de gallo on top or your favorite relish.
