Ingredients:

  1. 2 - large onions chopped
  2. 3 tablespoons - butter
  3. 2 tablespoons - all-purpose flour
  4. 2 cups - water divided
  5. 4 cups - chicken broth
  6. 2 - med potatoes peeled and diced
  7. 1 1/2 cups - mashed potato flakes
  8. 1/2 pounds - sliced bacon cooked and crumbled
  9. 3/4 teaspoons - pepper
  10. 1/2 teaspoons - salt
  11. 1/2 teaspoons - dried basil
  12. 1/8 teaspoons - dried thyme
  13. 1 cups - half and half cream
  14. 1/2 cups - shredded cheddar cheese
  15. 2 - green onions sliced

Directions:

In a large skillet, saute onions in butter until tender. Stir in flour. Gradually stir in 1 c water. Bring to a boil; cook and stir for 2 mins or until thickened. Transfer to a 5 qt. slow cooker. Add broth, potatoes, potato flakes, bacon, pepper, salt, basil, thyme and remaining water. Cover and cook on low for 6-8hrs or until potatoes are tender. Stir in cream; heat through. Garnish with cheese and green onions.
