Ingredients:
- 1 - white onion, minced in food processor
- 1/2 bags - of baby carrots, minced in food processor
- 1 - bunch of celery diced in food processor about 6 stalks
- 5 - cloves of garlic, sliced
- 2 tablespoons - of dried parsley, or 1 bunch of fresh chopped up
- 1 - stump of ginger, peeled and minced in food processor
- 1/2 boxes - of spinach/kale mix can just get spinach if you don't like cabbage taste of kale
- 1 cans - whole kernel corn, rinsed and drained small can, not large or can omit all together
- 4 - lemons, small juiced
- 2 - eggs beaten and added to lemon juice
- 1 whole - Rotisserie chicken, meat taken off and chopped into cubes use 2 chickens if making large batch
- 1 bags - pre-cooked ancient grains dump in

Directions:
Take the lemon juice/egg mixture and add a little bit of broth at a time to your small bowl then keep adding a little more broth each time until you feel it is incorporated. Then dump lemon juice/egg mixture in to soup to continue cooking. I did not even need to add salt or pepper. Sometimes lemons can have a "salty" taste so do not add salt until the end. Absolutely delish!
