Too much food processing affects the texture of the soup in the end, so adjust as desired. Go easy on the chicken stock, if you're mixing that with the tomato juice, since more stock can make the soup thinner or watery.

Ingredients:
- 4 cups - tomatoes (8-10), peeled, cored and chopped (OR canned whole tomatoes, crushed)
- 4 cups - tomato juice or a mixture of tomato juice and vegetable or chicken stock
- 12 - to 14 fresh, washed basil leaves, plus more for garnish
- 1 cups - heavy whipping cream
- 1/4 pounds - sweet, unsalted butter (1/4 pound = 1 stick)
- 1/4 teaspoons - cracked black pepper
- - crusty bread, for serving with
Directions:
1. In a saucepan, combine tomatoes and juice (or juice-stock mixture).
2. Simmer for 30 minutes over medium-low heat. Let cool slightly.
3. Puree, along with the basil leaves, in small batches in a blender or food processor (or better yet, use one of those hand-held food blenders). Remember to hold the lid on carefully while puree-ing, since the heat sometimes causes the lid to pop off.
4. Return the mixture to your saucepan and add cream and butter, stirring to combine, cooking over low heat until cream and butter are incorporated. Garnish with basil leaves and serve with your favorite warm bread.
