Japanese clear soup

Ingredients:

  1. 1 - Large sweet onion
  2. 1 - Large carrot
  3. 2 - Garlic cloves
  4. 1 - 2” peice of ginger
  5. 2 tablespoons - Oil
  6. 1 tablespoons - Sesame oil
  7. 1 cartons - Vegetable broth
  8. 2 cans - Beef broth
  9. 2 cups - Water
  10. 1/2 teaspoons - Salt
  11. 1/2 teaspoons - Pepper
  12. 1 tablespoons - Soy sauce

Directions:

Chop onion, carrot, pealed ginger and garlic into 1-2 inch pieces. Put oil and sesame oil into large stock pot and heat. Add veggies and sear on medium till bottom of pain is glazed over. Note- do not burn garlic. Add broth, water salt and pepper. Bring to boil then turn down and simmer for 30 min. Add soy sauce to taste.
May add chopped mushrooms and shallots when served.
