If you are making the eggs the day before, recommend adding a bit more mayonnaise and mustard because the yolk mixture tends to dry out a bit over night. My experience is that using a blender for the yolk mix results in a sub-optimal consistency.

Ingredients:
- - Eggs hard boiled
- - Scallions finely chopped
- - Grey Poupon mustard
- - Mayonnaise
- - salt
- - pepper
- - paprika
- - Eggs hard boiled
- - Scallions finely chopped
- - Grey Poupon mustard
- - Mayonnaise
- - salt
- - pepper
- - paprika
Directions:
Hard boil and cool eggs.
Slice eggs lengthwise, putting whites on serving dish and yolks in mixing bowl.
Finely chop scallions, 4-5 scallions per dozen eggs.
With a folk that is heavy enough not to bend the tines, smash the yolks and scallions together.
Add salt and pepper to taste to mixing bowl.
Using heavy folk, mix in approximately 2 Tablespoons of mustard, then mayonnaise until the mixture reaches desired consistency.
Fill egg whites.
Garnish with paprika.
