Ingredients:

  1. 2 tablespoons - olive oil
  2. 3 - onions chopped
  3. 2 cloves - garlic chopped
  4. 1/2 pounds - shrimp all shells removed and clean; (fine to use cooked, frozen shrimp)
  5. 1/2 cups - dry white wine
  6. 1 cans - diced tomatoes 28 oz.
  7. 1/2 cups - water
  8. 1/2 teaspoons - thyme
  9. 1/2 teaspoons - basil
  10. 1/4 teaspoons - paprika
  11. 1 teaspoons - very low sodium beef bouillon
  12. 1/4 teaspoons - Tabasco sauce
  13. 1 cups - uncooked rice not instant
  14. 1/2 pounds - very low fat kielbasa (such as turkey kielbasa) sliced, quartered
  15. 1 cups - fresh or frozen chopped green pepper

Directions:

1. Heat olive oil over medium heat; add onions and garlic; stir-fry 5 minutes.

2. Add shrimp, wine, tomatoes, water, thyme, basil, paprika, bouillon, Tabasco, rice and kielbasa.

3. Simmer covered for 30 minutes.

4. Stir in chopped pepper.

5. Simmer an additional 10 minutes.
