Italian White Bean and Spinach Soup

Ingredients:

  1. 1 tablespoons - olive oil or butter
  2. 1 - medium onion diced
  3. 2 - large carrots peeled and diced
  4. 1 - medium zucchini diced
  5. 2 cloves - garlic minced
  6. 2 cups - vegetable (or chicken) broth
  7. 2 cups - water
  8. 1 cans - 14 oz. diced tomatoes
  9. 2 cans - 15 oz. Great Northern or cannellini beans
  10. 1 tablespoons - Italian seasoning
  11. 1 1/2 teaspoons - salt and pepper
  12. 1/2 teaspoons - black pepper
  13. - bay leaf
  14. 3 dashes - red pepper flakes (if you don't like spice, then omit)
  15. 3 - handfuls of spinach leaves

Directions:

1. In a large pot heat the oil or butter over medium heat. Add the onion, carrots, and zucchini and sauté until the onion is translucent, about 8 minutes. Add the garlic and sauté for 2 minutes more.

2. Add the broth, water, tomatoes, beans, and seasonings to the pot. Bring to a boil and then reduce the heat to medium-low and simmer for 15 minutes.

3. Put the spinach in the pot and continue to simmer for 10 minutes. Serve.
