Ingredients:

  1. 1 tablespoons - Olive oil
  2. 1 1/4 cups - Carrots diced
  3. 1 1/4 cups - Onion diced
  4. 3/4 cups - Celery diced
  5. 4 cloves - Garlic minced
  6. 5 cans - Chicken broth 14.5 oz
  7. 1 cups - Acini de Pepe
  8. 1 dozen - Meatballs mini or cut smaller
  9. 6 ounces - Spinach chopped
  10. 1 tablespoons - Olive oil
  11. 1 1/4 cups - Carrots diced
  12. 1 1/4 cups - Onion diced
  13. 3/4 cups - Celery diced
  14. 4 cloves - Garlic minced
  15. 5 cans - Chicken broth 14.5 oz
  16. 1 cups - Acini de Pepe
  17. 1 dozen - Meatballs mini or cut smaller
  18. 6 ounces - Spinach chopped

Directions:

Saute carrots, onion and celery in olive oil until softened (6-8 minutes)
Add garlic and sauté (1 minute longer)
Add chicken broth, bring to boil
Add 1 cup of noodles and meatballs, then reduce heat to light boil (10 minutes)
Add spinach (last minute of cooking)
