Instant Pot Creamy Tortellini Soup

Ingredients:

  1. 2 - Carrots Diced
  2. 1 - Medium Onion Diced
  3. 5 ounces - Chorizo Sausage Cut into Chunks
  4. 2 tablespoons - Olive Oil
  5. 2 cups - Vegetable Stock
  6. 3 cups - Water
  7. 1 teaspoons - Salt
  8. 1 tablespoons - Dried Thyme
  9. 3 - Handfuls Baby Spinach
  10. 9 ounces - Dried Tortellini
  11. 1 cups - Fresh Cream
  12. 2 - Carrots Diced
  13. 1 - Medium Onion Diced
  14. 5 ounces - Chorizo Sausage Cut into Chunks
  15. 2 tablespoons - Olive Oil
  16. 2 cups - Vegetable Stock
  17. 3 cups - Water
  18. 1 teaspoons - Salt
  19. 1 tablespoons - Dried Thyme
  20. 3 - Handfuls Baby Spinach
  21. 9 ounces - Dried Tortellini
  22. 1 cups - Fresh Cream

Directions:

Set Instant Pot to sauté. Pour in the olive oil, add carrots, onion and chorizo. Sauté for 5 minutes. Add stock, water, seasoning, and tortellini. Turn off sauté. Stir, close lid and lock it.

Set to manual and adjust the time to 3 minutes. When done, wait 10 minutes and then do a manual pressure release.

Press sauté. Pour in the cream and spinach leaves; cook for about 2 minutes.

Serve warm.
