Ingredients:
- 1 1/2 pounds - beef stew meat cut into bite size pieces
- 1 tablespoons - olive oil
- 1/2 teaspoons - salt
- 1/2 teaspoons - pepper
- 1 teaspoons - Italian seasoning
- 1/2 teaspoons - smoked paprika
- 1/2 teaspoons - fajita seasoning optional
- 3 - Worcestershire sauce
- 3 cloves - garlic minced
- 1 - large yellow onion chopped
- 1 bags - 16 oz. baby carrots sliced
- 1 pounds - potatoes cubed
- 3 cups - beef broth
- 1 cans - 15 oz. tomato sauce
- 2 tablespoons - cornstarch
- 2 tablespoons - COLD water
Directions:
Add olive oil to Instant Pot and turn on the Saute function. When oil starts to sizzle, add meat and season with salt, pepper, paprika, Italian seasoning and fajita seasoning, if using. Stir in chopped onion and garlic and cook, stirring occasionally, until meat is browned on all sides.
Add beef broth to Instant Pot and scrape up any browned bits from the bottom of the pan while stirring. Add Worcestershire sauce, tomato sauce, carrots and potatoes.
Close the lid and steam valve on the Instant Pot. Change from Saute function to Pressure Cook function and cook on high pressure for 60 minutes, allowing pressure to release naturally for at least 10 minutes before doing a quick release by pressing down the pressure valve.
If desired, mix together the cornstarch and cold water until cornstarch is dissolved; pour into Instant Pot and mix with stew until it begins to thicken.
Serve hot with crusty bread or crackers.
