Ingredients:
- 1 1/2 pounds - fresh green beans trimmed
- 1 - large shallot thinly sliced
- 1 1/2 tablespoons - olive oil
- 1/3 cups - Dijon mustard
- 2 tablespoons - honey
- 2 teaspoons - soy sauce
- 2 teaspoons - hot sauce (such as Frank's)
Directions:
1. Bring a large pot of lightly salted water to a boil and prepare a large bowl of ice and cold water. Cook beans just until tender, about 3-4 minutes; drain and immediately plunge the beans into ice water to stop cooking. When chilled, drain well.
2. Saute the shallot in the olive oil a skillet until shallot is tender.
3. Whisk together the mustard, honey, soy sauce, and hot sauce in a small bowl.
4. Add green beans to skillet with shallot, tossing until warmed through, about 2 minutes. Drizzle sauce over hot beans and shallots and toss to coat. Sprinkle with salt and pepper, as needed.
