Ingredients:
- 1 pounds - fresh goat cheese softened at room temperature
- 1 bunches - chives (about 1/2 cup) finely chopped
- 6 sprigs - fresh thyme (large) leaves removed
- 1 bunches - small flat-leaf parsley (about 1/2 cup) leaves finely chopped
- 2 - medium shallots finely minced
- - salt and freshly ground black pepper
- 1 loaves - crusty bread (baguette, ciabatta) sliced 1/2-inch thick
- 2 tablespoons - extra virgin olive oil plus more for brushing
- 1 bulbs - fennel cored and shaved thin
- - juice of 1/2 lemon
Directions:
Preheat oven to 350 degrees F. In a large bowl combine goat cheese, herbs and shallots and season to taste with salt and pepper (some cheeses may not require any salt).
Lay the bread slices on a baking sheet and brush both sides with olive oil. Transfer to oven and toast until lightly crisp, but still slightly chewy, about 8 minutes.
In a medium-size bowl, toss the shaved fennel with the olive oil and lemon juice and season with salt and pepper.
To assemble: Spread a layer of the herbed cheese on the toasted bread slices and top with the marinated fennel.
