Brief Description
This is a quick chicken soup for when you need a last minute dinner idea. It is inspired by some of the soups I was served while staying with families in the Altiplano region of Peru while in graduate school. Their chicken soups were light but flavorful and usually had potato, and sometimes quinoa and cilantro. I’m not much of a recipe follower. I feel like they should serve more as inspiration rather than rules, so you can and should adapt based on what you have at hand and what sparks you that day creatively!

Season the chicken and sear it if you feel like it. Or don’t if you’re pressed for time. That’s the beauty of the instant pot!
Sautee the onion, carrot, celery, and cilantro stems in oil with some salt in the base of the instant pot until softened.
Add the garlic for another minute.
Add chicken, some salt and black pepper. Always black pepper! Most underrated spice in my opinion.
Add a handful of potatoes and a handful of quinoa.
Close the lid and set to manual high pressure for 15 minutes.
Let the pressure release on its own or quick release it depending on how much time you have and how hangry your family is!
Shred chicken.
Take off bone if you used bone in.
Add the rest of the cilantro to the pot and stir around.
Taste for seasoning.
