Ham & Cheese Chowder

Ingredients:

  1. 1 1/2 pounds - Potatoes Peeled & Diced
  2. 1/4 teaspoons - Baking Soda
  3. 3 tablespoons - Butter
  4. 1 - Small Onion Finely Chopped
  5. 3 tablespoons - All-Purpose Flour
  6. 3 1/2 cups - Whole Milk
  7. 4 ounces - Processed Cheese (Velveeta) Cubed
  8. 1/2 cups - Sharp Cheddar Cheese Shredded
  9. 1 1/2 cups - Fully Cooked Ham Cubed
  10. - Minced Fresh Chives
  11. - Ground Black Pepper To Taste
  12. 1 1/2 pounds - Potatoes Peeled & Diced

  17. 3 1/2 cups - Whole Milk
  18. 4 ounces - Processed Cheese (Velveeta) Cubed
  19. 1/2 cups - Sharp Cheddar Cheese Shredded
  20. 1 1/2 cups - Fully Cooked Ham Cubed
  21. - Minced Fresh Chives
  22. - Ground Black Pepper To Taste

Directions:

Place potatoes and baking soda in a large sauce pan. Add water to cover; bring to a boil. Reduce heat; cook, uncovered, until potatoes are tender, 6-8 minutes. Drain, reserving 1/2 cup potato water.

In same pan, heat butter over medium heat; sauté onion until tender 2-4 minutes. Stir in flour until blended; cook and stir 2 minutes. Gradually stir in milk and reserved potato water. Bring to a simmer, stirring constantly, until thickened 1-2 minutes.

Stir in cheese until melted. Stir in ham and potatoes; heat through; If desired, sprinkle with chives and pepper before serving.
