Grilled Citrus Scallops

Ingredients:

  1. 1 pounds - sea scallops rinsed thoroughly and patted dry
  2. 1 teaspoons - orange zest
  3. 1/2 cups - orange juice
  4. 1 teaspoons - freshly grated ginger
  5. 2 tablespoons - soy sauce
  6. 1 cloves - garlic minced

Directions:

Stir together zest, juice, ginger, soy sauce and garlic. Pour over scallops. Cover and refrigerate for 30 minutes.

Meanwhile, soak four 12-inch wooden skewers for 30 minutes in water.

Preheat grill on hot. Drain scallops. Thread onto skewers.

Grill on fish screen for 2 to 2-1/2 minutes on medium-hot heat. Turn and cook 2 to 2-1/2 minutes longer.
