Notes:
Seasoning overnight makes steak more juicy the next day. Bone-in ribeye gives more flavor to the meat from inner muscular fat. Sugar in the rub gives the steak a nice crust. If steak flames up once you open it on the grill, simple way to stop that is to close grill top.

Ingredients:
- 4 - one-pound beef rib-eye steaks (preferably dry-aged USDA prime)
- 3 tablespoons - kosher salt
- 1 tablespoons - granulated sugar
- 1 tablespoons - toasted and ground coriander
- - olive oil for drizzling
- - crushed red pepper flakes optional, for serving
Directions:
1. Combine sugar, coriander and kosher salt; rub into the steaks until well coated. Cover and refrigerate steaks overnight.
2. Heat a charcoal or gas grill to medium-high heat. Drizzle steaks with olive oil.
3. Grill steaks to desired doneness, about 3 to 5 minutes per side for medium-rare. Char steaks slightly to make a crust. Remove from the grill and let rest, uncovered, for 10 minutes.
4. If desired, drizzle cutting surface with olive oil, additional coriander and red pepper flakes. Slice steaks before serving warm.
