Green Beans with Parmesan Bread Crumbs

Ingredients:

  1. 1 1/2 pounds - fresh green beans trimmed
  2. 1 - large shallot thinly sliced
  3. 1 tablespoons - olive oil
  4. 1 cups - diced plum tomatoes
  5. 3 tablespoons - grated parmesan
  6. 2/3 cups - panko bread crumbs
  7. 2 tablespoons - olive oil

Directions:

1. Bring a large pot of lightly salted water to a boil and prepare a large bowl of ice and cold water. Cook the beans in the boiling water until just tender, 3-4 minutes. Drain and immediately plunge into the ice water to stop cooking. When chilled, drain well (opt to do this part the day before or early the day of and then store green beans in airtight container in the fridge until ready to finish cooking).

2. Cook shallot in 1 tablespoon of olive oil in a large skillet over medium-low heat just until shallots are tender. Add plum tomatoes and cook until softened, 3-5 minutes. Stir in green beans.

3. Toast the bread crumbs with parmesan in 2 tablespoons of olive oil in a small skillet over medium-low heat until golden brown. Sprinkle over green beans and serve.
