Preheat oven to 350•F. Cut each pita bread into 8 wedges; spread on baking sheet. Bake until lightly browned, 8-10 minutes. Meanwhile, over large bowl, grate 1/4 tsp zest and squeeze 2 T juice from lemon. Whisk in oil, salt, and pepper. Add tomatoes, onion, olives, dill, mint, and toasted pita; mix well. Gently toss in feta. If desired garnish with lemon slices and dill sprigs.

- 2 - pita breads
- 1 - lemon
- 1/4 cups - olive oil
- 1/4 teaspoons - salt
- 1/4 teaspoons - cracked pepper
- 2 pints - grape or cherry tomatoes halved
- 1/2 cups - thinly sliced red onion
- 1/2 cups - pitted kalamata olives
- 1/2 cups - chopped fresh dill
- 1/2 cups - chopped fresh mint
- 4 ounces - feta cheese crumbled (1 cup)
- - lemon slices and fresh dill optional
