Ingredients:
- 3 - eggs
- 3 teaspoons - vanilla
- 3 cups - zucchini grated
- 1 cups - salad oil
- 2 cups - brown sugar
- 1 teaspoons - baking soda
- 3 cups - flour
- 1 teaspoons - salt
- 3 tablespoons - cinnamon
- 2 tablespoons - nutmeg or 3 tablespoons if desired
- 1/4 teaspoons - baking powder
- 1 cups - pecan pieces
Directions:
Beat egg, add oil, sugar, zucchini, vanilla. Mix lightly. Sift flour, salt, baking powder, soda, cinnamon, nutmeg. Mix well. Add flour, mix to egg mixture a little at a time until blended. Mix. Add nuts by hand. Bake in 2 greased loaf pans at 325 degrees for 1 hour. Cool for 10 min.
