Ingredients:
- 9 ounces - dried egg noodles
- - Fry Light spray
- 10 - spring onions roughly chopped
- 2 cloves - garlic crushed
- 1 - red pepper deseeded, sliced
- 7 ounces - baby sweetcorn halved lengthwise
- 1/2 - inch piece fresh root ginger grated
- 4 tablespoons - dark soy sauce
Directions:
1. Prepare the egg noodles according to package directions; drain and set aside until required.
2. Meanwhile, spray a pan with Fry Light and fry the spring onions, garlic, red pepper, sweetcorn and ginger for 6-8 minutes.
3. Add the cooked noodles to the pan along with the soy sauce. Toss to mix well and stir-fry for another 1-2 minutes. Divide between four warmed bowls and serve.
