Garlic Roasted Carrots

  1. 2 dozen - assorted color baby carrots trimmed to 2 inch pieces
  2. 3 tablespoons - olive oil divided
  3. 2 tablespoons - balsamic vinegar
  4. 5 cloves - garlic minced
  5. 1/4 teaspoons - kosher salt
  6. 1/4 teaspoons - fresh ground pepper
  7. 1 teaspoons - dried thyme
  8. 1 - red onion thinly sliced
  9. 2 tablespoons - chopped fresh parsley for garnish


Preheat oven to 375 degrees F. Lightly grease baking sheet with cooking spray or butter.

In a large bowl, toss carrots, 2 tablespoons of olive oil, balsamic vinegar, garlic, salt, pepper and thyme.

Place carrots in a single layer on baking sheet; bake for 35 to 40 minutes or until tender.

While carrots are baking, saute red onion with 1 tablespoon olive oil until tender. Combine onions and carrots; garnish with parsley. Serve immediately.
