Fabulous Venison Backstrap

Ingredients:

  1. 2 cups - bread crumbs
  2. 2 teaspoons - parsley flakes
  3. - salt
  4. - pepper
  5. 2 pounds - venison backstrap
  6. 1 - egg beaten
  7. - oil for frying

Directions:

Mix the bread crumbs, parsley, and salt and pepper together. Dip the backstrap pieces into the beaten egg. Then roll them in the bread crumb mixture. Cover and fry for about 25 mins or until the meat is done.
