Endive Spears with Chicken Salad & Grapefruit

Ingredients:

  1. 2 - Large Belgian Endives separated into leaves
  2. 1 - Red Grapefruit
  3. 1 cups - Roasted Chicken Breast finely chopped
  4. 3 tablespoons - Fresh Chives chopped
  5. 2 teaspoons - Olive Oil
  6. 2 teaspoons - Champagne Vinegar or White Wine Vinegar
  7. 1/2 teaspoons - Salt
  8. 1/2 teaspoons - Black pepper freshly ground

Directions:

Set aside 18 largest endive leaves. Finely chop enough remaining leaves to equal 1/3 cup. Peel and section grapefruit, removing pith and membranes. Chop 8 grapefruit sections; set aside. Reserve any remaining grapefruit for another use.

Combine chopped endives, chicken, 2 tablespoons chives, oil, vinegar, salt and pepper in medium bowl. Mound 1 tablespoon chicken mixture in each leaf. Top evenly with grapefruit and sprinkle with remaining chives. Arrange on platter to serve.
