Enchilada Casserole

Ingredients:

  1. 1 whole - Onion Diced
  2. 1 tablespoons - Oil
  3. 1 cans - Diced tomatoes
  4. 2 cups - Chicken Diced, cooked
  5. 2 teaspoons - Chili Powder
  6. 1 teaspoons - Salt
  7. 1 teaspoons - Cumin
  8. 1 teaspoons - Oregano
  9. 1/2 cups - Chicken Broth
  10. 1 cups - Cheese Grated
  11. 8 - Corn or flour tortillas

Directions:

Saute onion in oil until tender. Stir in tomatoes, cooked chicken, and chicken broth. Add chili powder, salt, cumin, and oregano. Layer tortillas in bottom of 11x7" dish. Next put 1/2 of meat mixture and 1/2 of cheese. Add another layer of tortillas, followed by the rest of the meat mixture. Bake covered at 350° for 25 minutes. Then sprinkle remaining cheese on top and bake uncovered for 5 more minutes or until cheese is melted.
