Ingredients:
- 1 cups - Bisquick baking mix
- 2 - eggs
- 3/4 cups - milk
- 1 cups - chopped onion
- 2 tablespoons - margarine or butter
- 2 packages - 3 oz. cream cheese softened
- 1 cups - small curd creamed cottage cheese
- 1 - egg
- 1 teaspoons - dried basil leaves
- 1/2 teaspoons - salt
- 1/4 teaspoons - pepper
- 1 cans - 10.75 oz. cream of mushroom soup
- 2 cans - 4.5 oz. shrimp drained
- 1 cans - 6.5 oz. crabmeat drained and cartilage removed
- 1/3 cups - grated Parmesan cheese
Directions:
Prepare crepes:
Lightly grease a 6- or 7-inch skillet; heat until hot. Beat Bisquick mix with egg and milk until smooth. For each crepe, pour 2 tablespoons batter into skillet; rotate until batter covers bottom. Cook until golden brown. Gently loosen edge; turn and cook other side until golden brown. Stack crepes, placing waxed paper between each. Keep crepes covered to prevent them from drying out.
For Casserole:
Heat oven to 375° F. Cook and stir onion and margarine until tender. Stir in cream cheese, cottage cheese, egg, basil, salt and pepper; reserve.
Mix soup, shrimp and crabmeat together. Layer 6 crepes, half the cheese mixture and half the soup mixture in baking dish, 12-by-7.5-by-2 inches; repeat layers.
Sprinkle with Parmesan cheese. Bake until bubbly, about 30 minutes. Let stand 10 minutes.
