Easy Small Batch Truffles

Ingredients:

  1. 3 ounces - bittersweet chocolate
  2. 1 - egg yolk
  3. 1 tablespoons - unsalted butter
  4. 2 tablespoons - cream liqueur
  5. 2 tablespoons - icing sugar sifted
  6. - unsweetened cocoa powder or sifted icing sugar
  7. 3 ounces - bittersweet chocolate
  8. 1 - egg yolk
  9. 1 tablespoons - unsalted butter
  10. 2 tablespoons - cream liqueur
  11. 2 tablespoons - icing sugar sifted
  12. - unsweetened cocoa powder or sifted icing sugar

Directions:

1. In top of double boiler over - not boiling - water, melt chocolate.
2. Transfer to bowl; whisk in egg yolk and butter.
3. Beat in liqueur and icing sugar.
4. Let cool, cover and refrigerate until firm enough to roll, about 1 hour.
5. Form and roll truffles in either cocoa powder, icing sugar or chocolate sprinkles.
6. Refrigerate in an airtight container, layers separated by waxes paper for up to 2 weeks.
