Easy Small Batch Truffles

Brief Description
If you're sure you won't be able to resist a tin of truffles sitting in the fridge, maybe you had better eschew a large batch and go for a recipe that makes a dozen-plus truffles. Here it is. Vary the flavouring according to the supplies in your cupboard. A cream liqueur is particularly good.

Ingredients:
- 3 ounces - bittersweet chocolate
- 1 - egg yolk
- 1 tablespoons - unsalted butter
- 2 tablespoons - cream liqueur
- 2 tablespoons - icing sugar sifted
- - unsweetened cocoa powder or sifted icing sugar
- 3 ounces - bittersweet chocolate
- 1 - egg yolk
- 1 tablespoons - unsalted butter
- 2 tablespoons - cream liqueur
- 2 tablespoons - icing sugar sifted
- - unsweetened cocoa powder or sifted icing sugar
Directions:
1. In top of double boiler over - not boiling - water, melt chocolate.
2. Transfer to bowl; whisk in egg yolk and butter.
3. Beat in liqueur and icing sugar.
4. Let cool, cover and refrigerate until firm enough to roll, about 1 hour.
5. Form and roll truffles in either cocoa powder, icing sugar or chocolate sprinkles.
6. Refrigerate in an airtight container, layers separated by waxes paper for up to 2 weeks.
